In Australia:
As long as your domestic flight departs the domestic terminal (or domestic side of a joint domestic/international terminal), the liquids are fine.
If you put an opened bottle of something large (eg bottle of water) through the x-ray, they may ask you to take a sip of it to ensure it's not an explosive or other flammable item.
Obviously the general rules of air travel apply – ie nothing too sharp, corrosive, flammable etc. See the list here:
