3) There are any number of wall based thermostats you can use – a lot of it comes down to the functionality you want – usually with in floor heating you do not mess around too much with the temperature – more the start and stop times.
It also depends on if you are into Home Automation or not – you could put some rules on the shelly PM to query the wall temperature sensor and based on that (probably with some offsets) turn the floor on or off.
Sonoff have a number of devices that support relays and temperatures sensors and provide a method to turn the desired temp up and down – you can flash these with tasmota and then write some fairly complex rules on the units – but if you want to move to smart control you are going to need something to monitor the temperature, report it to the contactor controller and for the power to be turned on and off and this will require some smart glue between the设备
